yes you can ride with a down crown or they probably wouldn't sell them. they make your bike very low to the ground, it's the equivalent of taking out the spring on your forks.
hopping is when you push down on the front of your bike and make the spring compress, as the spring de-compresses you pull up and your front wheel rises into the air. keep doing this and you get higher and higher. if you pedal and hop at the same time you can pull giant wheelies... just make sure your handlebars are very tight or else you are in for a rough ride
