I had a coupe deville w/ a similar color and white leather interior. It looked great and recieved many compliments. I vote for white or off-white vinyl. 
There was a pearl white option in 68. I just got that on my drop top and it looks good w/ the subtle pearl sheen. my 2 cents, good luck.
